Finding You Again!

Hello Y’all! Summer is officially here and we’ve just hit a cooler front with temperatures dropping about 12 degrees overnight. It has been an interesting couple of months, sometimes hectic and other times not as much. But in everything, I’m so glad to be sitting on my overstuffed couch with a zillion pillows and writing this post. It is planting season, so if you love to garden, this is the perfect time to get on with it. Yesterday was the Fourth of July, and I must say that this year was a bit lowkey than the last couple of years. The fireworks weren’t as loud and didn’t last as long. Still, I was glad for the holiday. Today’s post is one I’ve been meaning to write for two months now. I started it but just now getting to finish it. It’s been a journey I have been on for a while and felt now was the time to share it with you so, grab a comfy spot wherever you are and read on.

As time goes by, we change. Whether the change is by our surroundings, life events, circumstances, or through the people in our lives or those we interact with daily. We are a product of these factors. Thinking back to when I graduated and had my first internship, there were so many dreams and things I had planned that I wanted to do and be…but you know how it goes – there’s what you want to do and be then…THERES LIFE. Depending on what side of the coin you’re looking at, some things could be good and other things unpleasant but the goal is to never lose yourself completely. I liken it to holding onto your hobbies, love, hopes, dreams or ambition… even if it’s by a thin thread because if we let life, circumstances, people, or events take that from us, we begin to die albeit little by little.

Now, there are things that are considered wishes. There are things that are likened to literally digging for fool’s gold. What I am referring to here are the simple things that make your soul happy. The things that brought joy to your innermost being without a huge price tag. Those things my friends, are the things we must never lose no matter what life brings or throws our way.

I love to bake. I’m not a master baker or an expert. I just love baking. My love for it was inspired by my grandmother who was a regional chef/competitor/winner when I was little. She put a lot of love into baking and cooking, you could taste it in the food. It was different. Baking is something I do for close friends and family and not on a large scale but it’s a part of me and what brings little flutters to my heart whenever I make anything from a simple recipe to something complex and unknown.

Life Happens!

I liken life to the sea. Its waves are strong when the tide is high, it could be still when the tide is low but be rest assured, it’s always moving. The goal is to know when to fight and when to let the waves do their thing. To know when to be flexible and adjust and when to brace for impact. To know how to watch the tide, how to time it just right, and when to make a run for it.

As we mature, we attain a layer of sophistication which is part of maturity and a positive on every front. But never losing touch with who I am is one of the things that anchor me to the ground despite life’s roses or shenanigans. If you are reading this post and you’ve got this far, thank you for being here. Take a moment and think deeply. Liken your life to an onion with layers. As you peel back the layers, the wins, the losses, whatever it may be; when you get to core, are you still that person you were? Can you still indulge in the simple things that make your heart flutter? Can you still connect to that person? Is there any semblance between that person and you?

Folks, never let go of who you were born to be. Never stop finding ways to do the things you love and things that really fulfill you. Only then will we feel anchored, only then will we not forget who we are or lose sight of why we are here. If you’re far removed from your authentic self, you can always retrace your steps and find you again. It will always be a balancing act but without any of the pressure…just focus on the simple things. Beautiful Chicago!

Hello Y’all! I hope you are doing well in your corner of the world. Summer lingers on while Fall attempts to creep in. Nevertheless, we’re not going to let that stop us from living life. Today’s post is a travel blog of sorts with a lot of architectural marvels of …you guessed it – CHICAGO! Often called the windy city or the Midwest hub. If you can think about it, this city has it – from beautiful beaches, freshwater fronts, architectural skylines, parks, museums, boat tours, restaurants, night life and the famous set of the Dark Knight Batman movie amongst many others. In my opinion, I think it’s one of the most beautiful cities in the United States and the world.

A Little History!

The land belonged to the Pottawatomie Native Americans who first resided there however the city reportedly began in the 17th century with the arrival of Missionaries, French explorers and fur traders and with its first census in 1880, was deemed the largest city in America till this day. The original city burned down in 1871 due to a lady named Catherine O’Leary whose cow kicked a bucket that started a fire that razed the then predominantly wood framed city to the ground. After this horrendous incident, the city began its rebuild using sturdier and more durable materials. Like every major city in America, it’s had its past being one of the centers for what we know as the ‘Retail Kings’ in America. These were powerful men that formed what we call are favorite franchise stores across the world, but it also served as a hot spot for a lot of the Hollywood legends the likes of Marilyn Monroe.

So Much to Do in the City!

The City of Chicago is a beautiful and great place to visit given its rich history, great food and tons of sights that are worth visiting. With so much to see and very little time, the obvious route was to pick a couple of iconic attractions to visit. These were mine! The city is on three levels…. or elevations. You need to visit to fully grasp what that means.

  1. The Chicago Bean originally named Cloud Gate was designed by an Indian-born British artist and consists of 168 polished steel plates welded together.
  2. The Navy Pier which is a 3300-foot-long pier that sits on the shoreline of Lake Michigan with tons of shops, restaurants, gardens.
  3. The Architectural Boat Tour (Night). If you’re a visual learner, this tour is a quick way to enjoy the rich architecture and history of some amazing buildings while floating along the Chicago River. The night tour is the best in my opinion because you get to enjoy the contrast of the lights from the buildings against the backdrop of the night sky.
  4. Chicago Riverwalk. This is a tiered lower level meant for pedestrians only and has restaurants, shops with views of the water and party boats while the city bustles above.
  5. Chicago Bus Tours. These were great. Grab a jacket and don’t forget to duck when driving through neighborhoods with overhanging tree branches. (http://www.viator.com)

Folks, there was so much to see and so little time. Like any city in America, each has its pros and cons, and the City of Chicago is not exempt. We had a great time and look forward to going back when we get a chance. Getting to see a little bit more of the world around me not only makes me appreciate the history but also how far we have evolved. Until I come your way again, I hope you stay safe and upbeat!

Fitness on the Road: It’s Doable!

Hello Y’all! How are you and I hope you are doing well in your corner of the world. Summer is here and we have slowly eased our way into triple digit temperatures in North Texas. A slew of air conditioning complaints, multiple breakdowns and power companies requesting light use and conservation during peak times…. the whole shebang! Anyway, the weather has been better today, and we just might be able to be outside for a little while. It’s been super busy, and I have had this post waiting in the wings for some time now. But alas! it’s done.

One of the things that irk me when I’m on the road but also something that I hear often from friends and coworkers is how difficult it is to maintain their fitness goals when traveling. I know a lot of you might say ‘It’s simple! Just stick to the plan’, but to be honest, it’s easier said than done and I have by no means figured it ALL out but I’m going to share what I’ve learned from friends that has motivated me to keep it up. These tips are not only simple but work if you commit to it. These are tips gleaned from a few friends, coworkers and of course the internet, so please stay with me.

Another List!

*Look up your hotel for fitness amenities or gyms close by.

*Pack your trainers…with the intent to use them.

*Try not to get ravenously hungry too often because it will lead to unhealthy choices.

*At meals, substitute, substitute, substitute…for healthy options, veggies or have dessert and plan on working out later. Finding balance where you’re not deprived and yet not overindulging.

*Travel with a scale. I know some might see this as over kill but I first learned this from a YouTube influencer who said it helped keep him on track; and knowing he had to weigh first thing in the morning, he tried to make better choices with food and being active during the day. Now this may be a bit much for some but if you’re looking to shed some serious pounds, this will work in conjunction with a lean-er diet.

*Try to rest. I find that on road trips, there a lot of late nights, tons of meetings and work that needs to be done. Try to sleep early and wind down so your body is rested even with late nights or days when you have minimal hours.

*Try to get some sun…..if you can’t, taking vitamin D supplements daily will help.

*Keep up your hydration. These days we have apps, reminders or just good ol water bottles – Do whatever works best for you.

Well folks, there you have it…a few tips that can help you and yours truly stay on track when we’re on the road. It is a balancing act and a lot of commitment but, it does work. Staying healthy is becoming an anomaly these days, so keep striving to give your body a fighting chance. Until I come your way again, be safe and stay in shape.

Miami in the Summer!

Hello Y’all! I hope you are doing well in your part of the world. As promised, I’m back with another post all the way from North Texas. As is the norm, we had 3-digit temperatures a couple of weeks back so being able to get away for a while was a relief. We were in Miami!!! One of the things I was excited about was the fact I would be out of the oven and in proximity to huge ‘natural’ bodies of water, and lots of negative ions; not the artificial water holes and fake lakes we have in my part of Texas. When it comes to vacations, it’s so easy to want to jet off somewhere FOREIGN but I feel like there is so much more to see and to experience in my own backyard that I had not really appreciated before now. These are some of the things I noticed on my trip to Miami, Florida so stay with me.

The Sun Shines Differently. Something about the sky and the sun is so different from North Texas. No matter how much sunscreen or hats you wear, you will be tanned…. disproportionately if I might add. 😂😂

It’s So Tropical. The palm trees, lush vegetation, greenery everywhere is so calming and gives me that sense of being closer to nature. If you build plant it, it will grow is my new motto for Miami.

A plethora of Beaches to choose from. There are many beaches there, but South Miami beach was the nicest…in my opinion. There was washed up sea moss and seashells on the shore. Getting waist deep into the waves, I could see small fishes probably eating the plankton off the moss. The water was so salty it stung a bit the first couple times I got in the water. However, it felt so rejuvenating.

The food is GREAT! No matter where we went, what kind of food we ate ex. Cuban, Asian, Vegan, American, Italian, the food was amazing and always served hot…and I mean with steam emanating out of it. This happened everywhere we ate so I guess it’s a ‘thing’ in Miami.

Floridians Appear to be More Fit than most. I saw less heavy-set people in Miami, and I got to thinking, we do love our cars, meat and potatoes in Texas. So…..it’s to be expected.

Downtown is A-M-A-Z-I-N-G! I love architecture so being Downtown in the middle of the action was a must. There are boat tours especially in the Miami Circle area Downtown. Nice restaurants overlooking the water and that fresh ocean breeze.

Some Things to Be Aware of in Miami.

Finding Parking is a Bear. A stranded hiker in the mountains has more luck finding cell service than it is to find parking especially in the downtown area. Hope on your luck or leave the day before…lol. Just kidding. But the city never sleeps so uber or taxi your way when you’re in the dense downtown area or bite the bullet and pay the price for parking. We literally had to download parking apps to pay for parking while we were there.

It’s Pretty Pricy. Being a tourist City, it does get expensive.

The lizards. We were near the coast and there were these Iguana lizards that would sometimes run when they see you or just stand really still and watch you. Some were the sizes of designer dogs…I kid you not – we were told they were harmless and would only bite when threatened. ‘Bite you say?’ was my response. ‘No hablas iguanas’ was my best Spanish phrase for I don’t do Iguana’s.

Huge Snakes. They have issues of invasive python species especially if you reside in the sub urban areas or everglades. These reptiles were brought over as exotic pets from Asia and Africa. These have somehow infiltrated the wild, are breeding like crazy and are now leaving the swamps and moving into the city in search of food.

Alligator’s that can turn doorknobs of people’s homes and scale fences…and I’m not kidding. I literally fell out of my chair when I saw a video clip but it’s true. People fence their pools and cover the top with a cage of sorts because you may want to take a nice evening swim and find a 12-foot gator or python enjoying the comforts of your backyard.

Lower Temperatures, Higher Humidity. Being one to whine about the weather ALL – THE – TIME, the humidity was obviously high-er. Wearing light clothing especially cotton serves as a wick to cool you down faster as opposed to other fabrics. While enjoying my newfound freedom, my hair did frizz, become poofy and stick to my skin. But it didn’t bother me much. I was just happy to be there.

Well, folks I was glad to be a pseudo tourist for a few days in Miami but happier to be back home. Like me, try to get out of your usual regimen and explore some of the jewels in your own backyard. Summertime Shenanigans: GF Baking with a Twist!

Hello Y’all! Thank you for stopping by. I hope you are doing well in your part of the world. It’s been a whirlwind of sorts lately but well worth it. We’re officially in three-digit temperatures and it’s getting unbearable by the day, but this is Texas, and the desert heat does not play….at all. Summer is the best time for the outdoors. It’s a great time to hike, swim, attend crawfish boil parties, go salsa/bachata dancing, go to the beach, outdoor concerts, do touristy things in your city like checking out local restaurants in your area, visit historic sights, and have fun in the sun – while wearing floral prints and enjoying every minute of it.

It’s the weekend and one of my favorite times to try out new recipes but also doing my best to incorporate healthy ingredients when I can. Today I am trying out a GF Yellow Cake Mix but adding my own twist to it. Being one to skip breakfast on a regular basis, having a healthy-er snack late in the morning will tide me over until lunchtime. Instead of reaching for a sugar filled, calorie dense treat, I feel like this recipe is a much better option.

Update on Health Goals

I’m still on track with eating healthy but also staying fit by being active every other day. One of the things I’ve done recently is trying out new and unknown veggies when I go to the shops. For some, this is the norm but those of us who have that ‘stick to what you know’ mindset, it’s a big step…in the right direction. Bok Choy has been my latest addition and I find it to be an interesting option but also very filling. I’m looking forward to what my next experiment will be. Now let’s get back to baking, shall we?

Typical Cake Mix Ingredients: 3/4 Cup of Water, 1/2 Stick of Butter, 2 tsp GF Vanilla and 2 Eggs. My Added Ingredients: 1/2 Cup of Roasted Salted Almonds, 1/2 Cup of GF Oats, 2 Scoops of Unsweetened Cocoa Powder, Monk Fruit GF Sweetener, 2-3 Scoops of GF Baking Flour. Utensils: Mixing bowl, measuring cups and spoons, 2 Baking Pans – To get flat square feel, and a spatula.

Let’s Go! Combine the cake mix ingredients together in a bowl. Add oats and mix. Add GF Flour. Keep mixing and set aside. In a small bowl, mix the cocoa powder and sweetener and set aside. Chop the almonds and place to the side. Grease both pans and add a dash of GF flour. Pour in the batter into the pans and spread around. Sprinkle in the almonds and lightly mix without letting the spoon go all the way down to the bottom of the pan. Using a spoon drizzle 3 tablespoons or more per pan of the cocoa mix on top and with a plastic knife or chopstick, run through the batter to get that lush chocolate swirl design. Bake at 350F with constant checks until the cake separates from the edges of the pan and the top is golden. Toothpick checks every 15 minutes is great.

Tips: This turned out great, but it had a slight hint of dryness. I would add an extra tablespoon of butter to the batter in my next attempt. Folks I missed writing, but I sure am glad to be back. Summer Vacation Aftermath!

Hello Y’all! It sure feels great to be back with another post. I hope you are doing well in your corner of the globe. I just got back from a much needed and well-deserved vacation, and I made a vow to myself to not ever go for long periods without actually taking the time to pack my bags and go SOMEWHERE, because stay-cations don’t cut it anymore. I turned off my phone and didn’t give a thought to work all the while I was gone. I did glance at my emails every now and then to make sure no one was harming themselves or getting into any crazy mischief while I was gone…Ha ha! Buy yes, its so nice to come to you with another post. Its amazing how getting time off to rest does wonders for every part of my being.

Vacations for me mean that ALL diets are off or in some way reduced to the barest medium. One thing I did as soon as I returned was to take a dose of a gentle laxative to clear my gut of any and all the junk I ingested,….in many ways, giving my digestion somewhat of a fresh start. Also drinking a lot of fresh clean water to rehydrate my body is something I’m incorporating.

Staying Focused and Loving Every Moment of It.

Some of the things I am incorporating post vacation have been helpful to me and my hope is that it helps someone else enjoy their time off without guilt but also get back in the saddle when they return home.

Big Volume, Low Carb Foods. Walk at least 10,000 steps a day. You can build up your resistance to do more. In my case, doing one loop around my favorite trail gets me 5000 steps so my goal is to do two loops and try to build my stamina as I go. It’s so hot in North Texas this period, my plan is to walk indoors…..instead of burning in the heat.

Don’t Deprive Yourself. Find healthy alternatives for the treats you love. I recently found a GF chocolate cookie mix and I’m going to try it out.

Try Dry Packaged Soup Mixes. These are not only healthy for you, but they are easy to make and keep you full for longer while supporting your weight loss goals.

Never Compromise on Sleep. People gain weight when they are stressed. Cortisol levels rise and the body goes into hibernation mode. This stems from the early man having to weather all kinds of hardships to survive – like harsh winters, famine and only God knows what…maybe fighting off dinosaurs? LOL! At least 7 to 8 hours will do great for your body, your mind and your emotions. If you can’t afford to sleep that long, consider taking short 30 minute to an hour-long nap during the day. That will help tremendously.

Get Your Fiber Intake Up. A diet rich in fiber helps with weight loss and an overall balanced diet. The times I’ve seen myself pack on the pounds was when I was eating a lot of high carbs, starchy and sweet foods. Fiber helps speed up your weight loss.

Stay Positive. You are what you think and if you believe you can, you will. Real and healthy weight loss takes time and is not a quick fix. It slowly gives your body time to adjust instead of the shock the body receives when you cut corners. Unless its life threatening, I’m really concerned about surgeries, or those trips people make to developing countries to get all kinds of procedures done.

Having Courage to Deal with Emotional Baggage. Sometimes, weight gain may be due to natural causes – a slow metabolism, thyroid issues or more. Other times, it could be due to an unresolved issue that triggers incessant snacking, binge eating or not eating at all. Doing the best to face up to any emotional issues clears me of any reasons I have to not lose weight or maintain a healthy body and instead focus my attention on resolving any medical issues or underlying conditions.

Breakfast Muffins Without the Top!

Happy new month folks! I hope your are doing well in your part of the world. It’s been a fun and frenzied start to this years Summer. Just when we were all getting back to living life as we once knew it…here comes the variant. And Guess what? The vaccine is just about useless to it. So we are on the precipice of either going back to masks or lockdown. If you ask me neither of these options look promising but we’ll have to wait and see.

We’re in July and I felt it was time to check in on my yearly weight and health goals and so far, so good. I haven’t attained my goals but I’m also not where I used to be so that’s a good thing in my book. I like looking out for new trends in health, wellness and fitness and after scouring the internet for the next best weight loss trend that is natural, low budget, requires no equipment and no payment plan, I came across a Youtuber named Wanyo Mori who has developed a unique exercise that sheds belly fat FAST! It doesn’t matter if you’re a guy or a gal, this exercise works and the results are unbelievable so stay tuned for a link at the end of this post.

Growing up in a society that idolized soccer, I remember a phrase that said ‘Bend it like Beckham’. For the younger generation, David Beckham is an Englishman and one of the best professional footballers who started out playing for Manchester United. He was good at kicking the ball in such a way that it curved and miraculously landed in the opponents goal post. Well…that was when he was young. The older we get, we’re not going to be able to ‘Bend it like Beckham’,…anymore…literally. Then comes the need for exercise, a change in diet, and moderation applied to E-V-E-R-Y-T-H-I-N-G. One of the things I have recently had to do is cut back on artificial sugars. At first, it was extremely difficult but as time went on, I adjusted and now, in a weird way, it’s my new norm. I named this post ‘breakfast muffins without the tops’ because you can still enjoy these muffins and not worry about gaining a massive amount of weight. These muffins keep me full until lunch time and keep the cravings down for four solid hours and counting. Now, if you’re a nibbler, you know that four hours is a long time to go without rummaging in the pantry for a quick treat.

Healthy Breakfast Muffins for Weight Loss!

Ingredients: 2 Cups of Oats (Original), 1 Cup of Flour, 2 Tbsps. of Baking Powder, 1 tsp of Cinnamon, 2 Tbsps. of Chia Seeds, 2 Tbsps. of Vanilla Extract, 1 Cup of Blueberries, 1/2 Cup Apple Sauce, 1/4 Cup Semi-Sweet/Unsweetened Chocolate Chips, 1/4 Cup Dried Cranberries, 2 Tbsps of vegetable oil and 1-2 Cups of Water.

Add baking spray to your muffin pan and scoop unto baking pan. Bake at 325F for 20-30 minutes. P.S: Oats do not need to be overcooked because they dry out very easily so constant checks are recommended. Sorry I forgot to take photos this time.

Trick Your Body Into Loosing A Few Pounds By…

  • Cutting out artificial sugars from your diet as much as possible.
  • Move. Whether it’s via walking, hiking, running, going to the gym or Zumba. The key is to be active the best way you can.
  • Get out in nature. There is a calmness that comes from being out in nature. This helps relieve stress, reduce cortisol and in turn your body relaxes and lets go of stored fats.
  • Laugh…a lot. Find amusement in everyday living.
  • Eat the rainbow.
  • Make smoothies from real fruit and veggies.
  • Maintain a healthy, peaceful environment as much as possible because a toxic surround will up stress levels, which will affect your sleep, what and how you eat (we tend to crave sweet, salty and greasy foods when we’re stressed) and your bodies overall rhythm.
  • If you have an issue with your gut, find a great probiotic that works for you. Eating fermented foods such as pickles, kimchi or sauerkraut can help.

Down By The Bay!

Hello Y’all! I hope you are doing well in your part of the world. Its the fourth of July here in the States and its a somewhat a quiet one this year. The last couple of days have been so beautiful with lower temperatures in the mornings which has been heavenly outside especially on walks without the humidity and sweltering heat. I’m not sure how long this is going to last but it’s Texas…who knows? I was in the Bay Area recently and it’s been one of the places I had never been to so I was looking forward to it. I had heard a lot but did not know what to expect.

One of the things I do when I go to new places. I love to mentally start out fresh on a clean slate and let the city write it’s own story and frame my experience. For a Texas transplant, I have pretty much gotten used to big spaces, big cars, wider roads, big EVERYTHING. So, getting into the city and seeing cookie cutter terraced homes with multiple stories literally perched on the edges of cliffs or on top of each other; or sidewalks with slopes that would leave an accessibility specialist dumbfounded was odd for me. Oh….did I mention that it felt like Winter in Summer? It was cold and windy. We were 10 minutes from the coast so according to friends, that’s the cold part of the city.

My Experience & Thoughts.

It’s the most expensive city in America! I kid you not. I saw houses that weren’t anything to write home about just by looking on the exterior but I quickly learned they were worth millions of dollars. Rent is through the roof and a lot of people live outside the area and come in for work because the cost of living is so high.

It’s cold. If you packed your bathing suit and planned on re-enacting those ‘Bay Watch scenes of running on the beach in the sun….in slow motion, I have to stop you right there. You may not make it back if you do LOL. Its not only cold but also windy. People were dressed for Winter in Summer. And I mean winter jackets, boots, scarves and hats.

The service was awesome! There’s a level of etiquette that I don’t get in Dallas at a regular restaurant. The waiters were more personable, very attentive and didn’t treat patrons like your typical assembly line fast food place. The service we got would only be received at high end restaurants in the DFW Metroplex.

There’s so much to see. Any person looking to do touristy things in San Fran needs about a full week to get it all in. It sounds long but it will be worth it in the end. From Wharf 39, the Pier, Alcatraz, bus tours, boat rides, restaurants, historic gardens, museums, the golden gate bridge, the Hippie area and so much more. It would be worth your time, I promise.

Earthquakes are the norm around there. The ground is constantly moving so the logical part of me is wondering why everyone and their neighbor has their houses perched on the edge of hill looking out to the ocean. I’m concerned that the ground has to literally cough and those structures may come tumbling down.

Never Get a rental Car in San Fran. The cost of parking is so high it’s not even funny. Taking a taxi, Uber or Lyft is the way to go. The city has a land scarcity issue which doesn’t help when finding parking. Driving around looking for a spot to park your rental is not a problem you want to have in an area you’re not familiar with. Uber it was for us!

The homeless situation is real. I was having breakfast at a diner with a full-on window view of the city, traffic and people going about their day. There was a building across the street from the diner with a recess along the exterior wall. Not too long after sitting down for breakfast, I see a homeless guy walk up to that corner and pee right there and keeps walking. I see a janitorial staff come out with a cleaning buggy and hoses down the area and go back inside the building. I kid you not, in less than seven minutes, another homeless goes right to that corner and pees and keeps walking. I see the janitorial guy AGAIN come out and do the same thing. I’m thinking to myself ‘what in the h**l is wrong with these people’? It’s not uncommon to see extreme wealth and homelessness on the same block.

Drug Addiction is a serious problem. I saw people shooting up on the sidewalk facing ongoing traffic in broad daylight. I mean…out in the open with the needle in their veins – where you could see blood and whatever drug they were injecting…And people just walked on by like it was the norm. That scared me a little. There were people lying on the sidewalk nodding off, some looked dead…and I kid you not, people just walked on. A friend of ours told us to be mindful how we held our phones out in public, that it could be snatched.

The Shrewdness of Time!

Hello Y’all! I hope you are doing well in your part of the world? Summer is officially a couple days away but the heat isn’t waiting till then. Its time to slather on the sunscreen, sun hats, sun shades and the short shorts because the proverbial ‘Texas Burn’, is on!

So I tend to get pulled into watching numerous clips of TikTok videos streamed on YouTube about dogs…especially when bored or just looking for something to distract myself. The funny antics or despairing experiences they’ve had and their journey to recovery and being loved back into the loyal, furry little friends that they truly are bring back memories of growing up and having litters of puppies every now and again. I come from a dog loving family so its in my DNA.

There was always a big pup among the litter who was the bully, cried the loudest and stayed on mama tits long after the others had dozed off for the night. Yes, I’m referring to that one. I remember one time when I had to feed them in separate bowls because this cute little rascal would literally eat everything before the others even got a head start. So one day, something happened. I had just got done serving up their food and I was sitting in the kitchen watching them eat. The little rascal finished his food and looked up at me and then at his brother eating a couple of feet away. I knew what he was thinking LOL. He knew by now that he wasn’t supposed to go near his siblings plates during meal time so this is what he did. He pretended to be sniffing something on the floor and walking around the room….all the while closing in on the nearest pups plate. I was watching him intently but he was oblivious to me. In this pups mind, he was smart…very smart if I might add. All this time, he was pretending to sniff something on the floor, he was inching closer to his brothers bowl. In this pups brain, all of this was going to go unnoticed…..WRONG!!! I was unto him from the moment he looked at his brothers plate. I could literally see the wheels turning as he was trying to figure out the most stealth way to steal a couple bites of food without me knowing. I share this to say that…..

Life is a playground and you’ve got to get on it and play. You will fall down, You will learn from it and hopefully get back up and in the game again…literally. With time and experience, you learn and you grow. You don’t fall for the same tricks as you once did. You aren’t as gullible as you once were. You tend to question things – by asking ‘why’ and by anticipating the outcome of things whether good or bad. There is a sharpness, a seasoning that comes to you that cannot be acquired in any book or crash course. Life itself is THE school.

Time makes you shrewd.

*If you apply yourself to the school of life, you can spot things from a mile away.

*You aren’t quick to react as you were in your early days.

*You are more observant.

*You listen more…not just to what is being said in the moment but how it’s said and when.

*You become better at reading motives and intentions.

*You become intentional and more clear on what works for you and what doesn’t. What you want and what you won’t accept.

*You realize that you are human and you DO have a choice. Nothing is set in stone. There are no absolutes…someone just hasn’t discovered a way yet.

In my opinion, life is a playground when you are young. You fall, you get scraped, heal faster, learn from it and get back on the playground. I believe this is the time to train yourself because when you’re older, you get stiffer, you’re becoming brittle, you’re not as quick or you don’t heal as fast. But its meant to be that way. This is when you can sit back and pour into the younger ones who are willing to listen. Those who understand the invaluable pearls of wisdom being bestowed and who want to ensure that they don’t fall into the same ditches you did…literally. A timeless saying that rings through is to ‘never cast your pearls to swine’ is one that I often heard growing up but honestly did not grasp the depth of until much much later.

Folks, these are the gains and rewards we enjoy when we actively participate in life. Some of us took a fall and are now watching from the sidelines, afraid to get back on this playground called life. I speak to you and to myself as well…’Don’t be afraid. There’s only two directions it’s going to turn out: Good or Not so good’. That’s it! It’s better to try and not get the outcome you want than to not have tried at all. The Baking Frenzy – Cherry Cake and Tea Breaks!

Hello Y’all!! I hope you’re doing amazingly well in your corner of the globe. The heat wave is on and there’s no getting away from the mugginess and hell-ish atmosphere we are going to be stuck with for the next couple of months.  Trust me when I say we have it ‘nicer’ in North Texas – I had to be in McAllen, Texas (a small town near the Gulf of Mexico)and when I stepped off the plane, I was welcomed with a wave of heat, a tight vacuum of hot air and beautiful palm trees. 🙂 The sunlight over there is pretty intense. Its almost too bright that at certain angles, it can be blinding. But I survived it….and that’s all that matters.  The weekend was all things ’90 Day Fiancé – Happily Ever After Reunion Part 1. And yes, I said PART ONE… hehe. If you haven’t jumped on the bandwagon, please do so. I promise you it will be worth your while…ahem (fake cough), that is if you love reality TV and all the craziness that comes with it!

On a brighter note, Summer is here and there’s fresh fruit every where!! I have been so occupied that I marvel at the time I find in my schedule to bake. I liken it to therapy – but with rewards LOL!  There’s fresh produce everywhere and I cannot do without trying at least one cake recipe that has fruit in it. The only ‘Disclaimer’ I’ll add is that you increase your workout sessions as you enjoy these recipes because the scale don’t lie; and after a while all those ‘placing on carpet versus tile or shaking it immensely coupled with undressing down and even removing your plastic teeth aligners will not save you…LOL!

Recently, I went grocery shopping over the weekend and came upon a deal that was too good to pass on. I got a big bag of lush organic cherries for 1/3 of the price.  I only realized a couple of days later that I had to figure out what I was going to do with them before they started going bad. Something easy and quick is my go to motto for recipes unless I REALLY want to go all out. So I finally decided on a Cherry Cake Recipe in the end, so Cherry cake it was! I wasn’t planning on blogging about it until I was halfway through and it occurred to me that it would be something y’all might like to try so I hope you enjoy the photos however few they might be.

Ingredients:  2 cups fresh cherries (pitted), 1 1/4 cups flour, 1 1/2 teaspoons baking powder, 1/4 teaspoon baking soda, 1 egg, 1 egg yolk, 1/2 cup sugar, 1/2 lemon zest, 1 teaspoon vanilla, 1/4 cup vegetable oil, 1/2 cup regular yoghurt, 1/4 cup milk.

Toppings: Whipped cream, melted chocolate.

Instructions: Pre-heat oven to 350F, grease  and flour 8 inch cake pan. In a bowl, mix together flour, baking powder and baking soda. Ina separate bowl, beat egg and sugar until fluffy (2-3 mins), add zest and vanilla and beat for one minute. Slowly add oil. Add yoghurt and milk and keep mixing. Slowly add flour a little at a time. Fold half the cherries into the batter and pour into the pan. Top with remaining cherries and lightly press down using a spatula. Sprinkle a tablespoon of sugar on top (if you wish). Bake for 40-45 minutes.

The Results Are In!!

This is such a scrumptious cake that you would probably need a fork to eat. Its very moist with bursts of juice from the cherries in literally E-V-E-R-Y bite.
